3° Congresso Internazionale di Spoleto sul Tartufo

The Third International Truffle Congress informed all those involved on the latest developments of modern technology relating to this field, focusing on the following aspects.

a) Cultivation: a large part was dedicated to the different phases of truffle cultivation (host plants, soil, ground preparation, cultivation of host plants in the field, harvesting etc) to give farmers useful information for cultivating the various species of truffles

b) Commercialisation and Transformation: some products on the market are not worthy of being called truffles; this part dealt with the problems of commercialisation, particularly conservation and transformation, which lower the quality and make it necessary to add synthetic flavouring, radically changing the true flavour of the truffles

c) The Basic Search: many researchers are trying to unravel the biological cycle and make the genomic sequencing of the truffle. The Third International Truffle Congress was an opportunity to know the results of research that are considered significantly important for applications
